  • 1/2 cup corn flour
  • 1/4 tsp black pepper powder

  • 1 onion, finely chopped
  • 1 capsicum, finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp ginger, finely chopped
  • 1 tsp garlic, finely chopped
  • 2 tbsp. soy sauce
  • 1 tbsp. chilli sauce
  • 1 tsp vinegar
  • 1 tsp sugar
  • 1/2 tsp black pepper powder
  • 1 cup water
  • 1 tbsp. corn flour mixed with 2 tbsp water
  • Spring onions, chopped, for garnish

Step-by-step instructions to prepare Egg Manchurian

  1. Heat a pan of water with a little bit of vinegar and allow it to boil. Then add the eggs so that the shells can be removed. After removing the shells, cut each egg into four pieces and keep it aside.
  2. Combine all-purpose flour, corn flour, black pepper powder, and salt in a mixing bowl. Add enough water to make a thick batter.
  3. Heat oil in a wok or a deep frying pan and make sure the flame is high.
  4. Dip each egg piece in the batter and fry in hot oil until it turns golden brown. Remove the fried egg oil from the oil and drain them on paper towels.
  5. In the same wok or pan, heat 2 tbsp oil.
  6. Add chopped onions, capsicum, green chillies, ginger, and garlic. Stir fry them for 2-3 minutes. (Add ginger garlic paste for a more intense flavour)
  7. Add soy, chilli, vinegar, sugar, black pepper powder, and salt. Stir well.
  8. Add water and bring it to a boil.
  9. Add corn flour mixed with water and stir well. Cook until the sauce thickens. But make sure the sauce stays a bit watery, as it will thicken further with time (It will finally become a semi-gravy as it cools).
  10. Add the fried egg pieces to the sauce and toss gently so that a coating of sauce is formed over the eggs.
  11. Garnish with chopped spring onions and serve them sizzling hot.
